We have a tradition of having a fish dish on New Year's Eve. We would buy more fish than we could consume to create left over fish for the New Year's Day.

The sound of "fish" in Chinese is the same as "more" or "abundance". Having fish left over from one year to the other year signifies the coming year being full and happy.
